Mp3 is a "lossy" format, which explains how these tiny players can hold so many hours of content. It doesn't explain the popularity of audiophile extras which purport to reproduce sound quality that simply isn't available. That being said, there really isn't much difference in sound quality among these choices.
As with other stereo systems, speakers (in this case generally headphones) are an important determinant of sound quality. A good set of headphones are often a reasonable upgrade. With the smaller (and obviously cooler) ear-bud style fit is important, so look for a small-diameter set with additional ear adapters. Although more expensive isn't always better, high quality headphones aren't cheap.
A player's feature set is much more significant. The "best" MP3 player is apparently a more expensive version of the same brand as one's friends have (generally Apple, but check to be sure. Other brands have equally adamant adherents.) If you like your music ear-splittingly loud (and who doesn't?) you'll want to look into batteries and chargers too.
